Instructions:

  3. Once the milk reaches a boil, reduce the heat to low and simmer it. Continue to stir the milk occasionally to prevent a cream layer from forming on top.
  4. As the milk simmers, scrape the cream layer that forms on top and push it back into the milk. This will help in thickening the Rabri.
  5. Keep simmering the milk on low heat until it reduces to approximately half its original volume. This process can take around 45 minutes to an hour. Remember to stir occasionally.
  6. Add sugar and cardamom powder to the thickened milk and stir well. Continue to simmer the mixture for another 10-15 minutes, or until the sugar dissolves completely, and the Rabri thickens further.
  7. Add saffron strands soaked in warm milk to the Rabri and stir well. This will give your Rabri a beautiful color and flavor.
  8. Turn off the heat and let the Rabri cool down to room temperature.
  9. Once the Rabri has cooled, transfer it to a serving dish or individual serving bowls.
  10. Garnish the Rabri with chopped nuts, sliced almonds, pistachios, cashews, and saffron strands.
  11. You can serve Rabri chilled or at room temperature, as per your preference.
