Motichur Laddu


Motichur Laddu is a popular Indian sweet made from tiny, deep-fried gram flour (besan) pearls that are then coated in sugar syrup and formed into small round laddus. Here's a step-by-step recipe to make Motichur Laddu at home:


Ingredients:

For the Boondi:

  • 1 cup besan (gram flour)
  • 1/4 cup water
  • A pinch of baking soda
  • Oil or ghee for frying

For the Sugar Syrup:

  • 1 cup sugar
  • 1/2 cup water
  • A few saffron strands (optional)
  • 1/2 teaspoon cardamom powder

For Assembling:

  • 2 tablespoons chopped nuts (cashews, almonds, pistachios)
  • Ghee or oil for greasing your hands

Instructions:

Prepare the Boondi:

  1. In a mixing bowl, combine besan and water to make a smooth batter. Ensure there are no lumps.
  2. Heat oil or ghee in a deep frying pan.
  3. Once the oil is hot, hold a perforated spoon or a slotted spoon above the hot oil. Pour a small amount of batter over the spoon, and tiny drops of batter will fall into the oil, forming small boondis. Fry until they turn golden brown.
  4. Remove the fried boondis with a slotted spoon and drain the excess oil on a paper towel. Repeat the process until all the batter is used.

Make the Sugar Syrup:

  1. In a separate pan, combine sugar and water. Bring it to a boil and simmer until it reaches a one-string consistency. You can test this by taking a drop of syrup between your thumb and forefinger; it should form a single string when stretched.
  2. Add saffron strands and cardamom powder to the syrup. Mix well.

Assemble the Laddu:

  1. Add the fried boondi to the hot sugar syrup. Mix well to coat all the boondis evenly.
  2. Allow it to sit for a few minutes to absorb the syrup. If it looks too dry, you can add a couple of tablespoons of hot water and mix.
  3. Grease your palms with ghee or oil. Take a small amount of the boondi mixture and shape it into a round laddu. Press it firmly to ensure it holds its shape.
  4. Garnish each laddu with chopped nuts.

Let Them Cool:

Allow the Motichur Laddus to cool completely. Once they have cooled, store them in an airtight container.
