Ingredients:

For the Sauce:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup mushrooms, sliced
  • 1 (28-ounce) can crushed tomatoes
  • 1 (14-ounce) can diced tomatoes
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Red pepper flakes (optional for heat)

For the Filling:

  • 2 cups fresh spinach, chopped
  • 1 (15-ounce) can chickpeas, drained and mashed
  • 1 (14-ounce) package of firm tofu, crumbled
  • 1/4 cup nutritional yeast
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For Assembling:

  • 9 lasagna noodles (check for vegan-friendly options)
  • 2 cups vegan mozzarella cheese, shredded
  • Fresh basil leaves (for garnish)

Instructions:

Prepare the Sauce:

  1. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until translucent.
  2. Add the red bell pepper, zucchini, and mushrooms. Cook for another 5 minutes until the vegetables start to soften.
  3. Stir in the crushed tomatoes, diced tomatoes, basil, oregano, salt, pepper, and red pepper flakes (if using). Simmer for about 15-20 minutes, allowing the sauce to thicken.

Prepare the Filling:

  1. In a mixing bowl, combine the mashed chickpeas, crumbled tofu, nutritional yeast, garlic powder, salt, and pepper. Mix well.
  2. Stir in the chopped spinach.

Cook the Lasagna Noodles:

  1. Bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package instructions until they are al dente. Drain and set aside.

Assemble the Lasagna:

  1. Preheat your oven to 375°F (190°C).
  2. In a 9x13-inch baking dish, spread a thin layer of tomato sauce on the bottom.
  3. Place three lasagna noodles on top of the sauce.
  4. Add half of the tofu and spinach mixture and spread it evenly.
  5. Sprinkle with 1/3 of the vegan mozzarella cheese.
  6. Repeat the layers with sauce, noodles, tofu-spinach mixture, and cheese.
  7. Top with a final layer of noodles, remaining sauce, and the last 1/3 of the cheese.

Bake and Serve:

  1. Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
  2. Remove the foil and bake for an additional 15-20 minutes, or until the top is bubbly and lightly browned.
  3. Let the lasagna cool for a few minutes before slicing.
  4. Garnish with fresh basil leaves before serving.
