Chocolate Chip Cookies Recipe:

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup vegan butter or coconut oil, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened applesauce
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups dairy-free chocolate chips
  • 1 cup chopped nuts (optional)


Instructions:

1. Preheat your oven:

Preheat your oven to 350°F (175°C).


2. Prepare your baking sheets:

Line your baking sheets with parchment paper or silicone baking mats to prevent sticking.


3. Mix dry ingredients:

In a small bowl, whisk together the flour and baking soda. Set this mixture aside.


4. Cream vegan butter and sugars:

In a large mixing bowl, cream together the softened vegan butter (or coconut oil), brown sugar, granulated sugar, and vanilla extract until the mixture is light and creamy. This should take about 2-3 minutes.


5. Add applesauce:

Stir in the unsweetened applesauce. This acts as an egg replacement and helps bind the ingredients together.


6. Gradually add dry ingredients:

Gradually add the dry ingredient mixture to the wet ingredients and mix until just combined. Be careful not to overmix; this can make your cookies tough.


7. Add chocolate and nuts:

Gently fold in the dairy-free chocolate chips and chopped nuts (if using).


8. Scoop and bake:

Use a cookie scoop or a spoon to drop rounded tablespoons of cookie dough onto your prepared baking sheets, leaving enough space between them for spreading.


9. Bake:

Bake in the preheated oven for 10-12 minutes or until the edges are golden but the centers are still soft. Remember that cookies will continue to cook slightly after you remove them from the oven due to residual heat.
