There's a simple recipe for making delicious veg momos at home:

Ingredients:

For the dough:

  • 2 cups all-purpose flour
  • A pinch of salt
  • Water (as needed)

For the filling:

  • 1 cup finely chopped cabbage
  • 1 cup grated carrots
  • 1/2 cup finely chopped bell peppers (any color)
  • 1/2 cup finely chopped onions
  • 2-3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil (or any vegetable oil)
  • 1 teaspoon vinegar
  • 1 teaspoon chili sauce (optional, adjust to your spice preference)
  • Salt and pepper to taste

For the Chutney:

  • 2-3 medium-sized tomatoes
  • 2-3 cloves of garlic
  • 1-inch piece of ginger
  • 2-3 fresh red or green chilies (adjust to your spice preference)
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • Salt to taste

Instructions:

Prepare the dough:

  1. In a large bowl, combine the all-purpose flour and a pinch of salt.
  2. Gradually add water and knead the mixture into a smooth, soft dough. The dough should not be too sticky or too dry.
  3. Cover the dough with a damp cloth and let it rest for about 20-30 minutes.

Prepare the filling:

  1. In a separate bowl, mix together the chopped cabbage, grated carrots, chopped bell peppers, and chopped onions.
  2. Heat sesame oil in a pan over medium heat. Add minced garlic and grated ginger, sauté for a minute until aromatic.
  3. Add the mixed vegetables to the pan and stir-fry for 2-3 minutes, keeping them crunchy.
  4. Add soy sauce, vinegar, and chili sauce (if using) to the vegetables. Season with salt and pepper according to your taste. Mix well and let the filling cool down.

Assemble the momos:

  1. Take a small portion of the dough and roll it into a thin, round disc (approximately 3-4 inches in diameter). You can make multiple discs at once.
  2. Place a spoonful of the prepared vegetable filling in the center of each disc.

Folding the momos:

  1. To fold the momos into the classic half-moon shape, hold one side of the disc and start making pleats on one edge, joining the pleats in the center. Repeat on the other side until the momo is completely sealed. You can use any folding technique you prefer.

Steam the momos:

  1. Line a steamer basket with parchment paper or lightly greased cabbage leaves to prevent sticking. Place the folded momos in the steamer basket, leaving some space between them to avoid sticking during steaming.
  2. Steam the momos for about 8-10 minutes or until the dough becomes translucent and cooked.

  1. Roughly chop the tomatoes, garlic, ginger, and chilies.
  2. Add them to a blender or food processor.
  3. Blend until you get a smooth paste. If it's too thick, you can add a little water to adjust the consistency.
  4. Transfer the paste to a saucepan and cook on low heat for about 5 minutes, stirring occasionally.
  5. Add soy sauce, vinegar, and salt to the mixture. Mix well.
  6. Continue to cook for another 2-3 minutes to let the flavors meld together.
  7. Taste and adjust the seasoning if needed.
  8. Remove from heat and let it cool down.
  9. Your momos chutney is ready to serve! Enjoy with your delicious momos.

Note: This chutney can be stored in an airtight container in the refrigerator for a few days.
